Beth's Best Muffins

What You Need

1 ½ cups all-purpose flour

1/2 tablespoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon kosher salt

1 cup + 2 tablespoons milk

1 egg

1/4 lb butter, melted (1 stick)

1/2 teaspoon vanilla

1/2 teaspoon orange zest

1 cup diced fresh strawberries (or any fruit you want)

3/4 cup sugar

Instructions​

  1. Preheat oven to 375 degrees.

  2. Place muffin tins in muffin pan.

  3. In a strainer or sifter, sift flour, baking powder, baking soda, and salt together into a large bowl. Stir with a spoon to make sure everything is well mixed.  

  4. In a measuring cup, whisk milk, egg, melted butter, vanilla, and orange zest together.

  5. Make a well in the middle of the dry ingredients. Pour the liquid mixture into the well. Stir together with a spatula just until combined (it’s ok if some lumps remain).

  6. Add strawberries (or other fruit) and sugar to the batter. Gently stir/fold all the ingredients together.

  7. Using an ice cream scoop, spoon the batter into the prepared muffin tins. Fill each about 3/4 of the way.

  8. Bake for 20-25 minutes. The tops should be nicely browned and a toothpick should come out clean.

Total Prep Time: 15-20 minutes

Cook Time: 20-25 minutes

Serves: 12-16 **This recipe can easily be doubled and will make 18-24 muffins. The milk doubled is 1 ¼ cup.
