Ever since the beginning of the COVID-19 shutdown, I have found myself doing more and more baking. There’s something about the smell of sweets baking that is so very comforting!
I have always had a sweet tooth, but usually a bite or two will satisfy me. I have to admit that, during this time, that amount has increased a bit!

When I was growing up, my favorite birthday cakes were either the one my mom made from the chocolate cake box mix with frosting (buttercream, of course) or a marble cake with mocha chip filling from Hansen’s Bakery. I still love both of those, but I have expanded my palate! Some of my favorite go-to desserts that I make are chocolate chip cookie bars, peach cobbler, fruit tarts, chocolate cake, coffee cake, cookies, and lemon bars. I also love baking sweets for others. When my kids were away at college, I sent them home-baked goods often. In fact, I still send them to my daughter and her husband in the Dominican Republic when I can!
