Breadcrumb Oven-baked Schnitzel
What You Need
1/2 cup bread crumbs (use more if needed)
2 tablespoons Mrs. Dash original seasoning
1/3 cup orange juice
1 egg
1/4 cup melted butter or margarine
6 chicken breast cutlets

Instructions

Preheat oven to 350 degrees.

Cover a cookie sheet with aluminum foil and spray it with PAM.

Beat orange juice and egg in a shallow bowl.

Pour breadcrumbs onto a plate and mix in Mrs. Dash seasoning.

Dip one cutlet at a time into the egg mixture and then coat on both sides with breadcrumb mixture. Place each cutlet onto the prepared cookie sheet.

Drizzle melted butter or margarine evenly over each cutlet.

Bake for 30-40 minutes.

Serving the dish
There are two main ways I serve this dish:

Arugula salad dressed with balsamic and a little olive oil with checca (diced roma or cherry tomatoes mixed with minced garlic and olive oil) on the side, or
-
Angel hair pasta with a lemon/butter/caper sauce (2 tablespoons melted butter, juice from 1 lemon, and 2 teaspoons capers).

Cornflake-crumb Oven-baked Schnitzel

1/2 cup cornflake crumbs (use more if needed)
1/3 cup orange juice
1 egg
1/4 cup melted butter or margarine
6 chicken breast cutlets
Paprika as desired

Preheat oven to 350 degrees.

Cover a cookie sheet with aluminum foil and spray it with PAM.

Beat orange juice and egg in a shallow bowl.

Pour cornflake crumbs onto a plate.

Dip one cutlet at a time into the egg mixture and then coat on both sides with cornflake crumbs. Place each cutlet onto the prepared cookie sheet.

Drizzle melted butter or margarine evenly over each cutlet.

Sprinkle with paprika.

Bake for 30-45 minutes.

Serving the dish
I often serve this with plain or buttered pasta. I also serve barbecue sauce and/or sweet and sour sauce (whatever your favorite brand will work), which make great dipping sauces.
