Here is a very simple chicken curry recipe that can be made in a slow cooker or an oven. I love to serve it over Basmati rice, but you can also serve it over couscous, quinoa, pasta, or anything else you want. Naan is perfect for dipping into the flavorful sauce! It is also very good by itself.
Most nights, when I make dinner, my wonderful husband cleans up after. He loves the nights when I make one-dish meals. Not only is this easy on the clean-up, but it is also easy for the preparation and cooking. These chicken recipes can be cooked on the stove, in the oven, and even on the grill. Some of them can be served directly from the dish the chicken is cooked in, as well.
Chicken schnitzel can be made many different ways and go by many different names. There is the traditional way of frying the cutlets, and there are non-traditional ways of baking the cutlets. My family adopted two non-traditional ways into our regular dinner repertoire. The first way was one I created when I wanted something a little more Italian-like. The second way was a modified version of a chicken dish my great aunt and my mom often made called cornflake-crumb chicken.
One of my favorite cuisines is Middle Eastern, especially chicken shawarma cooked on a rotating spit. I was very excited to find a similar spice recipe that enabled me to make my own version at home. No rotating spit required!
My family often eats chicken, which has inspired me to get creative! Having the same style chicken each night got boring pretty quickly. I love taking a chicken breast or cutlet and dressing it up in some seasoning! These dishes are simple to make and provide a delicious addition to your meal.
A meal that I enjoy making, and my family enjoys eating, is a simple and healthy chicken stir fry. The fresh vegetables sautéed with the garlic and ginger mixed with the teriyaki marinated chicken create a delicious blend of flavors. Sometimes I will add cooked ramen noodles at the end and turn it into chicken chow mein!
